BONJORNE WINERIES

HISTORY

Bonjorne Wineries was founded by the Escribano Jimenez family, linked to the wine world for generations, producing quality wines originating from the vineyards themselves.

The Winery is located in a natural setting, typically La Mancha, surrounded by oak pines and vineyards.

The latest in technology is combined with the sober architectural stamp of la Mancha in its interior: The systems for collection, selection, temperature control, cryomaceration, stabilisation and bottling in optimal conditions of hygiene and cleanliness that guarantee the quality of our products.

ZAGARRÓN WINERY

HISTORY

Zagarron, Vinos y Viñedos is the result of the initiative of a group of farmers to intensify efforts to produce wine, in the town of Mota del Cuervo (Cuenca), in the heart of La Mancha. The winery has continued keeping with the times since 1948 to the present day, with the 780 wine growers that comprise it possessing more than 5,000 hectares of vineyards.

The main major white grape varieties cultivated are Airén, Macabeo,Verdejo and Sauvignon Blanc, and Chardonnay and Muscatel as secondary ones. The main red varieties are the Tempranillo, Grenache, Syrah and Cabernet Sauvignon and Petit Verdot and Merlot as secondary ones. The Tempranillo and Airén are the organically cultivated grapes.

All varieties are covered by the Designation of Origin La Mancha.

Zagarrón, Vinos y Viñedos also remains committed to respecting the environment, as well as its social responsibility policy as motivating factors for employees, partners and consumers alike.

PRODUCTION

the computerisation of the entire process and the supervision of the technical equipment of the winery is the best guarantee for offering high-quality wines that meet the needs of the consumer.

The harvest takes place when the grape reaches its optimum point of maturity. Each variety is discharged in its corresponding hopper and subsequently crushed, de-stemmed, sulphited and pumped to the maceration.

Pressing then takes place in pneumatic presses, ensuring premium quality red wine or white musts. The must of the white wines are floated before its fermentation in tanks with temperature control; while the reds are subjected to malolactic fermentation simultaneous with the alcoholic fermentation.

The wine is stored in 103 tanks, with capacities ranging from 5,000 to 1,100,000 litres. The final process involves centrifugation, diatoms filtration, cross-flow filtration, membrane filtration and horizontal centrifugal separator for lees.

The winery has a fully fitted out room with American and French oak casks for the aging process. It also has a bottling room for 1,500 bottles per hour and with option of applying standard plug or stelvin closure. They then move to the 1,000 square meter storehouse, where they later leave to be marketed.
